Snow day fun!

Well we are about a week out of the Reset and we've been doing well! Both hubby and I were running....up until today since we have one wicked snow storm happening! It's May 2 for cryin' out loud!

My workout today was shoveling! My hands hurt the snow was so heavy!

But since I don't really have any place to go I decided to whip up a batch of Paleo Pumpkin Breakfast Cookie! Don't they look yummy!  Enjoy!

Day 21...The End!

Well folks...this is it!! The other day that I couldn't wait for!!! The END of the Ultimate Reset!!! Yay!

We certainly had many challenges and obstacles in our 21 day journey. We were cranky, crabby, hungry and strung out! But that said, it wasn't all bad. We both learned a lot about our eating habits and how we can eat better. And as to question in an earlier post about me really knowing how to cook clean? Yeah, well, I DO cook very clean and I will continue to do so! We just happened to get off track...I love that we are now back on track...it's made cooking exciting again!

Some other benefits of this reset is we both lost weight and inches! We both lost 7lbs!!!! I also probably took about 5 -6 inches total off as well! It's nice having my clothes fit even better than this time last year (and I thought they fit pretty good last year!)

I am excited to start the next phase..maintenance and exercise! I missed Insanity and running!! Which leads me to my next question for you the reader......would you like to read about recipes I use (or create)? Would you like to read about the Insanity workouts and my runs leading up to Tough Mudder and any other race I might add along the way? Please comment...I would love to hear from you!

Thank you for taking the time to listen to our rants on our journey to go clean. We appreciated the words of encouragement and we are both glad we stuck through this. I hope this was somewhat entertaining and informative for you!

Day 18....In the home stretch!

Well, we can finally see the light at the end of the tunnel! Ya, we've had a few cheat days this week, but they were minor bumps in the road. For the most part we've kept on task and we are somewhat enjoying it! Honestly, I can't wait to post Sunday evening when we are done!

Sorry for the quickie tonight...I taught at swim school and as a result we are sitting down to a late dinner of  roasted fennel and asparagus!

Day 13....Yes, we cheated!

Let me elaborate....yes, we cheated today!!!!! We cheated at lunch and we cheated at dinner! And do I feel guilty?! Nope, not one bit!
You might ask why? Why would you do such a thing when you have been eating so well for 2 weeks straight!? Well, the answer is pretty simple. We wanted to. I was so tired of a cold salad for lunch every stinkin' day and today I was chilled and those veggie potstickers in the freezer just called out to me. We even did something out of the ordinary for dinner (I can just hear all the Ultimate Resetters support page on Facebook gasping with disbelief and horror!) we had BW3s! Yes, you read that right. I had a Buffalo Chicken Wrap with fries (I did not finish the fries) nor did my hubby finish his tenders he ordered. As we sat back after dinner and reflected upon our glitch, we both declared that we were ready to start fresh again tomorrow.
We didn't do this out of spite or self destruction. We simply needed a break from being Vegan. We aren't nor will we ever be Vegan. Of course, our way of eating has completely changed. Our meat portions will be smaller, we'll likely cut back on coffee consumption and well as vino ;)
I've realized that I've always cooked fairly clean, we just fell off the wagon the last few months. I will say, this got us back on track...in a good way.
We'll finish out our week. After tomorrow we have only 7 days left.....and when all is said and done we'll always make room for a cheat day!

Day 10...still working on it....

Well, it's been 10 days. 10 long days, but we've managed to stick with it. The meals are flavorful, but it's really getting tiring preparing fruit and veggies constantly. I LOVE to cook.....those who know me will confirm that! This menu is restraining my creativity in the kitchen! Grrrr. Only 11 more days right?! Sigh.

On the plus side, I've lost 4 lbs since we started on the 8th of April.

And with that I am off to go and make a roasted red pepper and sweet potato soup for dinner!

Day 8...Hanging on

Well, today was probably the best day since we started the Reset. Today I wasn't hungry. Today the headaches were at bay. I feel a bit better. Maybe we turned a corner? I don't know, but whatever it is, I'll take it.

I am still not diggin' salads for lunch every freakin' day, but, we've marked another day off the calendar so that makes me happy :)

I've made a cup of sleepy time tea and settle in for the night. We'll see what tomorrow brings. Good night.

Day 7 Up, down and all Around

Well then. I am not sure my husband or I were prepared for the roller coaster of emotions we'd go through this first week of our detox/cleanse with the Ultimate Reset. Let's just say this weekend involved much yelling and crying. I think we are over the major hump now (I swear, we better be, or this whole thing is getting sent back)!

I don't know what this week is going to hold. I am quite worried with this all vegan menu that is planned for us, but we made it 7 days! Only 14 more to go...sigh....

Day 3, 4, 5...starting to think this is a joke

UGH!!!! Nothing but UGH! Seriously!

Dinner on day 3 was yummy, but my poor husband  was so hungry afterwards! It was a veggie stir fry and a salad. Sure it was a lot, but still! Day 4 I was starving about an hour after lunch  and today...I suppose it hasn't been too bad. Breakfast seemed to hold me (it was hot rice cereal with apples, walnuts and maple syrup!).

As for the other half, I'll be lucky if I am not served with divorce papers before the end of this! I feel terrible that he is having such a hard time. I told him he should just quit....it's just not worth it if you aren't into it! Frankly, I wanted to give up last night too. He was the one who convinced me to give it 'one more day'. We'll see. Right now I am not convinced this cleanse/detox is  doing anything except make us want to kill each other. Sigh. One good thing out of this is we are both sleeping. Hard. Nothing can wake me until the alarm and even at that I don't wake right away. On the downside, I start losing steam about mid to late afternoon. Sure hope this improves.

Headaches and hunger pangs

Just shoot me now. Hubby doesn't want to continue and yesterday I had a headache that nearly brought on a puking episode.....and it's only day two!

Breakfast on day one was good...eggs, spinach, and toast. For lunch a nice salad and dinner a salmon, potatoes and asparagus. Not bad, but poor hubby is hungry. I just did some research and we can up our portions if needed (thank goodness!)

Breakfast today (day 2) was filling...for me anyways! A big bowl of oatmeal and blueberries and a half cup of yogurt with maple syrup (it was yummy too!)! Lunch was a Greek salad with chicken. I really should have brought a snack today :( oh well.

As for the supplements...ha! One tastes like you are drinking sea water and the other tastes like lawn clippings...'nough said? Frankly, I am getting used to the salty water and at least today the headache is quite bearable. I tried not to overdo the water today...I think that helped too. Hopefully the reward of this reset outweighs the suffering now!

Shopping for things I never heard of before....and more!

 I grabbed my son at 1pm CST and we set out to 'find' all the goodies my husband and I would need to get through week 1 of the Ultimate Reset (and beyond). Frankly, it was exhausting! Our first stop was Trader Joe's (because in the Reset guide it said we would find much of the things we needed there). My son is happy, he's trolling around looking for the hidden goose.....me, not so much. Okay, that's a stretch....I found tempeh! And it was relatively inexpensive, so, yay! I also find a wonderful variety of fresh herbs and veggies that I need (beets anyone?) The aisles start looking all the same as I walk up and down them for the third, fourth and fifth time. But it pays off! I find the quinoa that I missed on the first and second trip up the aisle! Score! Unfortunately, I can't find miso paste....or mirin..or coriander or smoky tempeh strips.... Ugh.
So we head over to the checkout where the chipper checkout chick asks me if I found everything. I stare at her and say,'no, not quite'. This however pays off because while they didn't carry the Nori sheets (ya, I didn't find those either!) I come to find out that Hyvee does! Cool.
Sooo, off to Hyvee we go! I am very happy our first stop was Trader Joe's because I would have been greatly depressed if came here first! They really didn't have much ...except for miso paste and Nori sheets! Yahoo! But we still aren't done.....last and final stop...Costco! Who doesn't love Costco?! There we stock up on berries, kale, spinach and seaweed! Not sure if it's exactly what I needed, but at this point I don't care! If I have to stop at one more store.....Ahhhhh!
Now it's 4:14CST.  My kitchen has stuff all over it and I haven't started 'pre-making' anything. Crap. Guess it's a sign that I need to log off and get my butt in gear!

Everything I have read tells me this will pay off in the end....tomorrow we begin. Wish us luck

It's Finally Here!

Good afternoon!!

My long awaited packages have arrived!!!! I opened the boxed and now I am in shock! We have much learning to do in the next couple of days, but I am confident once we do figure this all out, we won't want to give clean eating the boot. The recipes I have seen look fantastic! It might be a challenge looking for some of the ingredients though...like tempeh? I sure hope I can find it somewhere before Monday!

Right now I need to sit down and read and watch the dvd's that were provided. I'll post more Sunday about the foods we'll get to eat and my luck finding some of these exotic ingredients!

Waiting sucks

Good morning!

As you can see I am a tad impatient! I want my Ultimate Reset to get here! Oh well, guess some things are out of my control.

So, I bet many of you are wondering 'why the heck does she want to do this?' Well, for starters I feel like I need to get in better shape....especially since we are doing Tough Mudder again this year! Second, I have always thought on some level that I cooked fairly 'clean' for myself and the family. I believe this Reset will prove me wrong. Ugh. I hate being proved wrong. Just ask my husband.

Lastly, I am doing this because I am sick and tired of this packaged food crap. I want to fuel my body, not rot it away! You feel and look better when you feed your body what it was intended to eat. I want to get there......

Unknowns

I have decided to create this blog to document my 21 day journey on Beach Body's Ultimate Reset . I titled today Unknowns because I haven't even received the package yet! I honestly don't know what the hell to expect. Seriously, other than reading what other people have experienced, I have no clue what will happen to me! Will I melt away? (well, I hope some of me does!), will I turn green from eating all those veggies?(I sure hope not!), well, you get the idea.
